Ali, we have a few topics that directly deal with stretching. First, you can check out the topics in the Groundwork Exercises subforum that start with a 2 in the title:

Ramener, and ramener into movement
The Bow and the Back crunch
Bow on one knee
Jambette
Spanish Walk and Polka
Mountain goat

We also have some discussions about stretching:

Overview: Stretching Exercises for Horse and Rider
Biomechanical benefits of stretching exercises
Pilates for Horses
Hind Leg Jambette, and Strengthening Muscles

I think there is more, but this should give you some ideas to get started. Concerning your question of how to prepare the horse for working with humans, you might want to check out the introductory posts in the Groundwork Exercises subforum again. A look at the titles of the threads might help you to find the relevant ones already. ;)

I would also like to add the exercises of the classical gymnasium: shoulder-in, shoulder-out, travers, renvers. They all are a combination of stretching on side of the horse, flexing the other and strengthening the hindquarters at the same time. They can be varied and combined to make it actually fun and not just work. Going on a straight line or on a circle, you can smoothly change difficulty and stretching effect.
All these exercises have the added bonus that they can be done in increasing speed variations, whereas the usual stretching exercise are done stationary.

I think that those exercises, combined with those that Romy mentioned make for an ideal warm-up. And if done from the ground, they also warm up the human as well ;).
